When the trader comes, they will have whatever, there are a few differnt traders who have different stuff. If you look towards the top right on the traders screen there is a button that says 'orders' or something of the sort. On this screen you can pick what you want to order from that trader and they will bring it the next time THEY come again, there are multiple traders.

Sheep make wool, and when your pen is full, the excess will be killed for mutton, chooks make eggs and are killed for chicken.

Once you buy some of that animal the next time they come through they animals will be cheaper. I think cows drop to 1, and sheep to but definitely be prepared to drop some resources on the animals to get them. Seeds are 3, to buy them for the first time as well so plan ahead. As for multiple merchants, only one merchant will visit a trading post per year, but you can always build more trading posts to get more merchants.

Of course each merchant only visits one trade post, so with multiple ones you need to keep them all well stocked.
